Summertime cooking is so much fun. I must have a hundred zucchini flowers on my enormous plants. Bees are buzzing inside them while tiny vegetables form. There are many recipes out there for breads, cakes, fried planks and grilled slices,so I thought I would share with you, some of my favorite zucchini uses:
1. Shred zucchini and potato together for "hash browns." Top with a "dippy egg."
2. Add slices of zucchini in layers of lasagne, using the noodles for the top and bottom.
3. Slice those extra zucchini and toss them in the freezer for later.
4. Saute cubed zucchini with onions, garlic, tomato and eggs for a great wrap.
5. Shred zucchini into mashed sweet potatoes, cooked lentils, onion, garlic, etc. and form into burgers using corn meal on the outside.
6. Throw zucchini in a blender and add to your favorite chocolate brownie recipe. So moist!
